Grilled Pizza

Our new favorite summer dinner.

Our Publix (in the next town) sells fresh pizza dough in their bakery section, which makes this super-easy.

We don't have a 'fancy' grill - just a regular decade old one! - and these turn out great!


These literally take less than 20 minutes from start to finish - I just keep the ingredients together in the fridge - sliced veggies, mozzarella, feta with herbs, fresh spinach, and pizza sauce.   I combine evoo with salt and pepper and brush on the pizza before layering the ingredients.  The pizza sauce is sparse and one of the last ingredients I add - so no soggy crust.   (The only difficult part is remembering to take the dough out of the fridge an hour before I want to make dinner.)  


One time I slaved all day making chicken soup from a delicious recipe my neighbor shared.  My son said, "this is delicious mom - just like Campbell's!!"  I was quite insulted and he said, "Mom - they are the professionals!  That is a compliment!"  Boys.

I've got grilled caprese pizza on our menu for the week. There's just somethin' about pullin' a pizza off the grill that makes it absolutely divine.

Mmmm, but at our house it takes 20 minutes to cook the bacon and sausage.
