Easy Summer Salad



I am really enjoying this salad, this summer.   I have some favorite dishes I only cook during certain times of the year, and I consider this salad to be a 'summer' treat.  I combined a couple of recipes and came up with this one.  

Couscous Summer Salad

1 box couscous (parmesan flavored) - cook per directions and let cool, fluff with fork
1 can garbanzo beans (chick peas) drained
1/2 of a red pepper - diced
1/2 vidalia onion - diced
1 cucumber - diced
1 tomato - diced
1/4 c. fresh parsley - chopped
4 mint leaves - chopped
3 or 4 TBS. Lime Juice
1/4 c. olive oil
1/2 c. feta chees (I use fresh mozarella, sometimes)
salt and ground pepper

I think I may add chopped celery, next time (as in "next week")

Combine all ingredients and keep chilled until ready to serve.

Enjoy!

Couscous has to be the easiest thing ever to prepare and the most versatile.
