Santa Fe Soup

Yum.


Even my picky child likes it.


And it is ridiculously easy.


Santa Fe Soup

Santa Fe Soup
1-1/2 or 2 lbs ground beef
1 vidalia onion -diced
2 cans black beans
2 cans shoe peg corn
1 can pinto beans
1 can rotel
1 can black eyed peas
1 can diced tomatoes
1 packet taco seasoning
2 packets Ranch Dressing -dry
2 cups water


Brown the beef with the onion - then drain the fat/grease
Place all ingredients in a crock pot and cook on high until simmering.

Serve with shredded cheese, a dollop of sour cream, and fritos!

Maybe I could make it without beans. We're not really bean people. Looks yummy though!
This is my favorite soup!! My recipe is slightly different, but pretty much the same. It is so good and you're right, it's super easy! It's actually on the menu for tomorrow night! :)
